  1. Mash the banana in a bowl. Add the remaining ingredients (except for coconut) and mix. Heat coconut oil in a skillet over medium to medium high heat. Add the egg mixture and turn the heat down to medium to medium low, depending on your stove. If you’d like coconut in your egg mixture, add it now (it adds a little texture and substance to it which I prefer). Scramble the eggs just like normal!
